VIETNAMESE CHICKEN PHO
Pho is such a cooling dish admired from all people around the world. I have a simple version that is easy to make and most of all delicious! I would recommend adding some chicken balls to make the dish even tastier.
Ingredients:
- Chicken stock
- 2 Star Anise
- 1 Cinnamon Stick
- 3 Cloves
- 4 cloves of garlic
- Some rice/pho noodles
- Sriracha Chili Sauce
- Bean Sprouts
- Lime
- Salt (to taste)
- Pepper
- Coriander seeds
- Fish sauce
- Soy sauce
- Ginger
- Roughly chopped onion
- Thai basil
Instructions:
1. In a small pan, roast your spices (pepper, coriander seeds, star anise, cinnamon, cloves) until they are fragrant.
2. Once fragrant, take out your spices, and put them in a muslin cloth, and then wrap it up.
3. In a pot, add your chicken stock, roughly chopped onion, whole ginger, whole garlic, and spice packet. Bring to a boil until an hour.
4. Add the fish sauce and soy sauce to the broth.
5. Strain the broth using a strainer and keep aside.
6. In a separate pot, bring some hot water to a boil. Quickly blanch the pho noodles for 5-10 seconds and then take it out and add it to your pho bowl.
7. Pour some broth over the noodles in your pho bowl.
8. Add bean sprouts, lime juice, Sriracha sauce, Thai basil, and some raw garlic (if you like it) as a garnish over your pho noodle soup.
9. Enjoy!
