Cajun Fresca Pasta
Cajun Fresca Pasta:- (For 4 people)
Ingredients:
- 1 pound of vermicelli pasta
- 2 tsp olive oil
- 2 tsp of minced garlic
- 6 tomatoes, chopped
- ½ cup of tomato paste
- Salt, to taste
- Fresh parsley, for garnish
- 1 tsp Cajun seasoning
- ½ cup mozzarella cheese
- ½ cup parmesan cheese
- 2 tsp oregano
- 1 tsp dried basil
- ½ tsp rosemary
Method:
1. Boil water in a casserole, then add the pasta and cook for about 8-10 minutes. Drain and set aside.
2. In a sauce pan, heat the olive oil and add the garlic. Sauté for a minute. Add the tomatoes, salt, oregano, dried basil, rosemary, and Cajun seasoning. Cover the pan and cook until tomatoes are soft.
3. Pour sauce over pasta noodles and toss. Garnish with the cheeses, and parsley. Serve hot!
