Personally, I don't eat a lot of non-veg meals, but when prepared well, each taste will linger forever.
Each meat has a unique taste, flavour, fat content and consistency. It is important to harness these factors and harmonize them with flavours to create an outstanding effect. The salt needs to be balanced just right, so that it does not overwhelm the other tastes. I love the burning flavour of hot chillies.... the powder fried in smoking hot oil provides a predictably smouldering background and very finely sliced fresh thai bird beak chillies will provide a totally unpredictable, sudden sharp searing burst of fire and flavour that will light up any ham and cheese sandwich or tikka or kebab!! It is this that transforms an otherwise routine recipe and turns a polite, peaceful, pontificating, person into a raving, roaring, rearing dragon asking for more!!. |
IF PRACTICE MAKES PERFECT... AND THERE IS NO SUCH THING AS PERFECT........ THEN WHY PRACTICE??
