Aglio e Olio- Garlic Spaghetti
This recipe makes a nice light snack; it's simple spaghetti tossed with some nice mellow garlic and soothing olive oil. The key is to cooking your garlic to perfection; you need it to be just right! Make sure that you don't turn the heat on too high or else you will burn all of your garlic.
Recipe:
For 2 people:
Ingredients:
- 3 cups of water
- 400 grams of spaghetti*
- 5 cloves of garlic
- A garnishing of parsley
- 4 tablespoons of olive oil
- Salt, to taste
- Red chili flakes (Optional)
(*Note*- do not use fresh pasta, the packaged spaghetti creates a dryer consistency, ideal for this recipe)
Instructions:
1. Pour your water in a pasta pan and bring to a boil.
2. While we wait for this, cut the garlic in thin slices
3. Once the water is boiling, add your spaghetti, cook, and then strain and rinse with cold water.
4. In a sauce pan, add your olive oil
5. One the oil is hot add your garlic and reduce to a low flame
6. Cook the garlic so that it doesn’t become black and bitter, but nice and lightly fried
7. Add the chilli flakes
8. Turn off the heat and toss with your spaghetti
9. Garnish with fresh parsley, and serve hot
